Our daddy is “the Master” when it comes to grilling. Now, by master, I do not mean he has the largest grill, or fanciest tool, or coolest marinade injector – we’re talking about the appreciation of grilling in its most simplistic form.
His secret is in the method, not the sauce or rub. It’s in the how to. Daddy’s chicken – and to quote him – is “crispy on the outside, juicy on the inside.” Isn’t that what everyone wants to experience when eating chicken?

Let’s go back to basics and not fuss about the best sauce! If the chicken is dry, sauce isn’t going to fix it, or a rub, or any other mad scientist way of trying to get your chicken right. Now, before your chicken gets up and runs away, take a deep breath. This recipe is deliciously simple and everything you’re looking for in great grilled chicken, thanks to our favorite “Simple Man,” Daddy.
Lynyrd Skynyrd and Marshall Tucker Band were our lullabies growing up – and on that note, the essence and style of this way of cooking is the root to good eating in our book.
Darlin’ you do not need to make this fancy. Salt and pepper will do. That’s a common hum of his walking through the kitchen or while he sits watching our hands work. To him, beauty is unpretentious.
Lessons of how a live oak tree grows to how to eat a chicken bone clean are part of who we are and what he has helped us become. He taught us how to love all things in their natural beauty, but most importantly he taught us how to be loved – in the way he loves us, our mother, and every living thing.
His soul is filled with humility and grace which in turn makes us soul-full. In this recipe, we spend a little time with him. Make sure you turn some tunes on. It only makes the smell of smoke sweeter.
